Parmesan Knife

In the world of special purpose knives this is really special purpose. The knife was primarily designed to break off chunks of parmesan cheese from a large wheel by piercing the wheel with the knife tip and prying off chunks with the blade. Most people purchase their Parmigiano-Reggiano in chunks so will find this knife of limited use for this purpose. However, I find the sharp edge of the broad blade perfect for safely shaving slivers of parmesan from the chunk. These slivers are great in hearty soups and salads. I even like to serve the slivers with crackers and a robust red wine.
