No cook should be without this humble little helper. Why do we carry such a seemingly common item? Because most of the soup skimmers on the market don't really do the job. You have seen those Pyrex® skimmers at the gourmet shops. They look great but they don't address the physics of the problem. Oil is lighter than water. So you want the base of the pour spout to be as close to the bottom of the skimmer as possible so that you can pour off all of the good liquid and separate it from the fat. This is really difficult to do with glass. Enter the best skimmer ever made. We've tried the pretty Pyrex® varieties and several competing plastic versions. This is hands-down the best we've found.
Made of smoke polystyrene, it has a four cup capacity. Simply pour your hot soup or stock into the cup and wait a few seconds for the fat to rise. Then pour the fat-free liquid from the dripless spout until only the fat remains in the skimmer. The skimmer is easy to clean and is dishwasher safe. It's graduated - although we don't find this feature particularly useful. It has other uses - measuring cup, oil dispenser, drink mixer and plant watering cup - although we dedicate ours solely for de-fatting soups, stocks and broths. It's made in the U.S.A. You'll love it!
